Ben,has she considered a FWB 2700? The 22mm barrel version is not too heavy,I got a L/H version from Bedford Target Supplies within 3 weeks of ordering,they are a bit more expensive than the 1907,but come with sights,which you would need to buy for the Anschutz. Neale

This would make a greater starter rifle into FB target rifle,Winchester P14 action ,Schultz and Larsen 30inch target barrel with 1800 rounds through it,right hand action in left hand target stock with adjustable butt stock, looking for £150 rfd to rfd,pics by email,shoots great,I have used it competitively out to 600yards with good results.
